Midnight Cookie Co. is South Everett's Late-Night Dessert Destination

I'd been meaning to get down to Midnight Cookie Co., so I was thrilled when my friend Kristen mentioned it during our trip to Arlington. It's just easier to review a place when you aren't by yourself. Especially in a case like this, since I don't usually eat a lot of sweets.
Funny, then, that we ended up splitting a chicken tamale at A&A Cafe & Tamaleria (permanently closed) across the parking lot beforehand. We wanted at least a little something savory before diving into a bunch of cookies.
When we got to Midnight Cookie Co., I felt a little overwhelmed by the options.
The only real option was to try them all. I asked for one each of all 13 (11 menu standards, a monthly special, and a mystery cookie) and for the two vegan options to be wrapped separately so I could see how they compared. Plus a pint of Full Tilt PB&J ice cream to try later, and a cup of coffee for Kristen.
As I mentioned, I don't eat a lot of sweets, but I still had to... eat a lot of sweets. So I cut each cookie into quarters and set one-quarter of each aside for myself, a quarter for my husband, and filled an extra box they gave us with the other quarters for Kristen and her husband.
Three and 1/2 cookies? Totally doable. And they were all fantastic. The vegan options were especially tasty and rich, which is a pretty great accomplishment with no butter, chocolate, or eggs.
My favorites were the S'mores cookie with its glossy marshmallow crust and the Oatmeal Craisin Chip. I always love an oatmeal cookie, and this one has white chocolate chips — a nice touch.
If you order in, we heard from Midnight Cookie Co. that they have better luck with UberEats than Postmates, and I believe it based on my experience setting up test orders on both sites.
Midnight Cookie Co. currently opens at 11:30 a.m. daily. While other locations stay open until 3 a.m., Everett closes at 11 p.m. weekdays (and Sunday), and 1 a.m Friday and Saturday.
What Everett gets that Seattle and Edmonds don't is in-store ice cream by-the-scoop.
The cookies are baked in-store, too. Stop by the shop sometime for a sniff, or have them bring a box over. They can add milk if you're up late chilling out with friends.
