Everett's Veggie Sandwich Roundup

When I first cut meat from my diet, I had no idea where to go out to eat. Over time, I realized veggie sandwiches made for an awesome lunch. Here are a few favorites I’ve discovered so far. 

MAJOR LEAGUE PIZZA

Major League knocks it out of the park with more than just pizza. Their veggie grinder dubbed the “infield,” was actually my first foray into the veggie sandwich universe. Toasted to perfection with their oh-so-fresh bread. A swiss/cheddar/parm meld of garlic, red onions, black olives, and Roma tomatoes topped with alfredo sauce. Throw a spear pickle on the side with a bag of chips and call it a day. 

This was my gateway veggie sandwich. And it hooked me! Turns out there’s more to life than pizza after all. Oh wait, I just saw on Major League’s menu the chips that come with their sandwiches can be subbed for Jojo’s. Guess I’ll have to go back again!

One of my favorite Everett pastimes is grabbing some red rock on the way to Howarth Park or Edgewater Beach. So I was thrilled to discover that Red Rock offers two meatless subs: a veggie and a vegan option. I opted for the veggie, which came stacked with provolone, swiss, garlic mayo, dijon, cucumbers, tomato, lettuce, sprouts, olives, green peppers. And avocado. Loads of lovely avocado. You can also sub vegan cheese on any sandwich and/or gluten-free bread.

As always with Red Rock, this sub was delicious and totally hit the spot. I’ll often get a whole and eat half for lunch and half for dinner.

Valley Organic Deli

I wanted to find at least one more veggie sandwich to round things out. Valley Organic Deli is known for its fresh and healthy food, so I figured they’d have a veggie sandwich, and they do! Their veggie sandwich comes loaded with hummus, tomato, carrots, avocado, beets, goat cheese and mixed greens. 

The sandwich was fresh, with the flavor of the beets being the strongest of the bunch. So if you like beets, this sandwich is for you. It also came with a tasty side salad topped with carrots, onion and cucumber. Valley also has salads, wraps, smoothies and more!
