Everett’s Veggie Sandwich Roundup: Round Two
Editor’s note: All cheese types are in lower case; the Chicago Manual of Style recommends this can be done safely without confusion. 😉
A while back, I rounded up a few veggie sandwiches from around town. You guys shared some great additional recommendations on Facebook, so we felt it only right to do a veggie sandwich roundup round two!
Triangle Fruit Market

My first stop was at the always lovely Triangle Fruit Market in the Delta neighborhood. Their ‘Royal King Sub’ is a ‘check-the-boxes and build-your-own type of situation. Perfect for those who prefer customization.
My veggie selections included red onion, lettuce, tomato, pickle, cheese, dijon mustard, mayo, and salt and pepper on a ciabatta roll. These subs are fresh, simple and totally hit the spot. Next time I’ll probably splurge the extra $1 for guac. Triangle Market also has great ice cream, produce, and other food staples.

The next stop on my list was to try the ‘Peter Rabbit’ veggie sandwich at Middleton Brewing. It was the only sandwich you have to be 21+ to enjoy! Though it was the thinnest sandwich I tried, it was loaded with tomato, red onion, mushrooms, greens & avocado, havarti & provolone cheese, with honey mustard on dill rye. Basically, what Peter Rabbit would eat, I assume.
It was tasty, especially with excellent thick and crisp tortilla chips and hearty salsa on the side. Not to mention the oh-so-refreshing beers Middelton brews in-house. The Cookie Crisp Stout was a treat unto itself! You can view their current tap list on their website.
Kindred Kitchen

The next stop on my list was Kindred Kitchen, a social enterprise of Housing Hope that provides job training. Their space on the first floor of Hopeworks Station on Broadway is gorgeous. All of the food I’ve tried has been great, including their vegetarian sandwich.
“The Vegetarian,” as they call it, comes with creamy house-made Tunisian carrot spread, traditional hummus, swiss and havarti cheese, fresh English cucumber, vine-ripened tomato, crisp leaf lettuce and red onion on organic whole grain bread. It was served with tortilla chips and a pickle. The sandwich was a fresh and hearty two-hander.
I would gladly eat any of these sandwiches again. Thanks to everyone who commented on Facebook and gave the recommendations!
