Hot Outta Brooklyn Bros.’ Oven, 7 Brand New Pizzas

You love Brooklyn Bros. Pizzeria, right? 

Would you love them even more if I told you they have seven, yes SEVEN new pies? 

I thought so.

Brooklyn Bros. has been in our pizza rotation for a number of years and in all that time, I do not recall them releasing new pizzas, except maybe the Sicilian, but exciting things happen all the time. In addition to their existing menu of specialty pizzas, they have added a slew of new pizza combos. Check these out:

  • The Brighton - mushroom, red onion, basil

  • The Williamsburg - roasted garlic, ricotta, red onion, basil

  • The Bushwick - sausage, mushroom, green pepper, black olives

  • Over the River - roasted garlic, sausage, mushroom, onion

  • The Giuseppe - shredded mozzarella, fresh mozzarella, ricotta

  • The Hot Hudson - roasted garlic, sausage, Calabrian chilis, ricotta

  • The Brownsville - artichoke hearts, black olives, pepperoni

Fittingly, the new pies were released on Pi Day. Being the pizza lovers that we are, we hurried to the Everett location to try out a few of the new pizzas. Instead of ordering a piece of each (we considered it!), we decided to get two 14” pizzas: The Hot Hudson and Over the River. 

Let me start by singing the praises of The Hot Hudson. This pizza seemed more mild than hot to me, despite the Calabrian chilis. Calabrian chilis were new to me but I have discovered that they are a variety of hot pepper from the Calabrian region of Italy. For perspective, the jalapeno has a Scoville heat unit (SHU) of  2,500 to 8,000. The Calabrian chili ranks around 25,000 to 40,000 SHU. I’m not saying any of this to scare you off though, quite the opposite.

The Calabrian chili has a completely different flavor profile from the jalapeno, it is slightly smokey and lacks that bitter taste that green peppers have (spicy or not). The texture is drier and thinner, not fleshy like a jalapeno or habanero pepper. Add the warmth of the chilis to the delicious sausage from Cascioppo Bros. Meats, roasted garlic, and creamy ricotta and you have a well-balanced, flavorful pizza. The chilis on our pizza were placed in a way so we did not get chili in every bite so the heat was not overpowering.

The boyfriend chose Over the River which is one of our favorite topping combos and is a combo that we had been wishing Brooklyn Bros. would offer one day. That awesome Cascioppo Bros. sausage, thinly sliced mushrooms, thinly sliced onions, and the ever-present, much-loved roasted garlic.

Both pies had that incredible dough recipe, thin crust cooked to perfection, topped with a thin layer of their signature tomato sauce. If Brooklyn Bros. decided to stop offering toppings, I would still order crust. I like it that much. 

A reheating tip for those of you who prefer their leftover pizza warm: toss your slices in a dry frying pan over medium heat to crisp up the bottom of the crust. Works like a charm.
